Brooklyn Boy Bagels is a bakery specialising in authentic New York-style bagels and freshly baked products. We are seeking a skilled and motivated Baker to join our team at our Marrickville bakery.

The successful candidate will be responsible for preparing, baking and maintaining the quality of our bagels and other bakery products while ensuring efficient daily production.

Key Duties and Responsibilities

- Prepare, mix, knead and shape dough for bagels, breads and other bakery products according to established recipes and production standards.
- Measure and combine ingredients accurately to ensure consistency in dough texture, flavour and quality.
- Monitor dough fermentation, resting and proofing processes to achieve the required texture and consistency.
- Prepare and shape bagels using traditional baking techniques, ensuring uniform size, weight and appearance.
- Boil bagels before baking to achieve the desired crust, texture and authentic New York-style characteristics.
- Operate and monitor commercial ovens, mixers, dough-processing equipment and other bakery machinery.
- Regulate oven temperatures, baking times and production methods to ensure consistent product quality.
- Prepare and apply toppings, seeds, seasonings and other ingredients to bagels and bakery products.
- Inspect finished bakery products to ensure they meet established standards for taste, texture, appearance and freshness.
- Monitor ingredient stock levels, assist with ordering supplies and ensure appropriate storage of raw materials.




- Plan and coordinate daily baking schedules to meet production requirements and customer demand.
- Minimise ingredient wastage and maintain appropriate portion control throughout the production process.
- Maintain cleanliness and sanitation of baking equipment, preparation areas and storage facilities.
- Ensure compliance with food safety, hygiene and workplace health and safety requirements.
- Work collaboratively with other bakery staff to maintain efficient production and timely completion of orders.
- Assist in developing new bagel varieties, recipes and seasonal bakery products.

Qualifications and Experience

- Relevant qualification in Baking, such as Certificate III in Baking, or an equivalent qualification, is desirable.
- Minimum 1 year of relevant experience working as a Baker in a commercial bakery or similar workplace.
- Experience in dough preparation, fermentation, shaping, boiling and baking processes.
- Knowledge of commercial bakery equipment and production techniques.
- Understanding of food safety, hygiene and workplace health and safety requirements.
- Ability to work independently and collaboratively in a fast-paced bakery environment.
- Strong attention to detail, time management and organisational skills.
- Ability to maintain consistent product quality and meet daily production requirements.
- Willingness to work early mornings, weekends and public holidays as required.

Pay: $75,000.00 – $85,000.00 per year
