Cook (Full time) – Pellegrino Pizza Restaurant, Warragul VIC ABOUT US Pellegrino Pizza Restaurant is a full-service kitchen in Warragul, Gippsland, operated by Cann River Hospitality Pty Ltd. We serve a full a la carte menu – traditional handmade wood-fired pizza, house-made pasta, house-prepared meats and daily specials – to diners in a licensed venue seating over 100. Our kitchen works from raw ingredients. All doughs, sauces and ingredients are prepared in house from scratch, and we fillet and prepare our own meat.

THE ROLE

Reporting to the owner, you will:

– Prepare, season and cook food to order across the full menu

– Prepare doughs, stocks, sauces and dressings from raw ingredients

– Portion and fillet meat and poultry in-house

– Select and purchase stock, and manage supplier relationships and food cost

SKILLS AND EXPERIENCE

Essential:

– An industry Certificate IV in Commercial Cookery or Kitchen Management,



or an equivalent qualification or experience recognised as meeting the ANZSCO skill level for Cook

– A current valid Food Safety Supervisor Certificate

– Minimum 1 year’s experience as a cook in a full-service restaurant

– Demonstrated skill preparing meals, sauces and stocks from scratch

– Meat and poultry preparation and portioning

– Working knowledge of food safety and HACCP

– Availability to work evenings and weekends

– Experience with wood-fired pizza and fresh pasta production

SALARY

– $82,000 per annum plus superannuation, full-time (38 hours per week).
