Swillhouse is an independent hospitality group creating venues with distinct identities and lasting relevance. Across restaurants, bars and late-night music rooms, each space is shaped by craft, atmosphere and a deep attention to detail.
Our venues are only as strong as the people behind them. We care about how the work is done — leadership that’s present, standards that matter, and teams who take pride in their role and the experience they deliver every day.
The lights are low, the blues are blowing, and the spirits are high at the Baxter Inn. A place where John Cheever and Johnny Walker might spend some time together. When you come down the stairs, and step through the door, you’ll see straight away that we like whisky here (and whiskey too, for that matter). What you drink and how you want to drink is up to you – we’re just here to help.
