Brooker Trading Co PTY LTD Brooker Trading Co is seeking a skilled and experienced Chef to join our kitchen team in Moree, NSW, on a permanent full-time basis. Located in the heart of Moree, Brooker Trading Co is a family-owned hospitality business offering freshly prepared breakfast, brunch and lunch dishes, along with catering and event services. The successful candidate will be responsible for preparing and presenting high-quality meals, contributing to menu planning, managing food costs and stock levels, and supervising daily kitchen operations.

The role also involves maintaining consistent food quality, coordinating kitchen staff and ensuring compliance with food safety and hygiene standards. Benefits Permanent full-time position with 38 hours per week. Competitive annual salary.

Hands-on involvement in food preparation, kitchen coordination and quality control. Opportunity to further develop culinary and kitchen leadership skills. Task & responsibilities Plan and develop menus in consultation with management, considering customer preferences, seasonal ingredients and cost-effectiveness.

Estimate food and labour costs, manage portion sizes and minimise food wastage. Order food supplies and ingredients according to menu requirements and inventory levels. Prepare, cook and present a variety of breakfast, brunch and lunch dishes, including catering orders.





Monitor food quality throughout preparation, cooking and presentation to ensure consistency in taste, texture and appearance. Follow recipes and established cooking procedures to maintain consistent food quality. Supervise food plating and presentation to ensure meals meet the establishment's quality standards.

Ensure appropriate storage, preservation and handling of food and ingredients to maintain freshness and minimise waste. Coordinate with management, kitchen staff and front-of-house employees to ensure efficient kitchen operations and timely service. Communicate daily specials, menu changes and special dietary requirements to relevant team members.

Train, guide and supervise cooks and other kitchen staff, including demonstrating appropriate food preparation and cooking techniques. Delegate kitchen duties and monitor staff performance to maintain efficiency and operational standards. Implement and maintain food safety, hygiene and workplace health and safety procedures.

Maintain cleanliness in food preparation areas and regularly check kitchen equipment for safe and efficient operation. Qualification & experience Demonstrated experience working as a Chef in a commercial kitchen, preferably within a busy restaurant or hospitality establishment. Strong knowledge of food preparation,



cooking techniques and professional food presentation.

Experience in menu planning, food costing, inventory management and ordering supplies. Ability to consistently prepare and present high-quality meals. Experience in supervising, training and coordinating kitchen staff.

Sound knowledge of Australian food safety, hygiene and workplace health and safety requirements. Strong organisational, communication and time management skills. Ability to work independently and collaboratively in a busy kitchen setting.

Ability to work efficiently under pressure while maintaining consistent food quality standards. Availability to work rostered shifts, including early mornings and Saturdays as required. About Company Brooker Trading Co is a family-owned hospitality business located at the heart of Moree, NSW.
