About us

Esper Group is a Sydney hospitality group with four venues, each with its own identity:

- Rosie Campbells: a casual, culture-led diner and bar with a young, creative crowd and a brand built to scale

- Mille Vini: an intimate wine bar and restaurant built for date nights and long dinners

- Rovollo: fine casual dining focused on pasta and the grill, serving an affluent CBD and corporate crowd

- The Heritage Room: our newest venue, a dedicated wine room and private dining space attached to Rovollo

Our venues are small and independent by design. Tight kitchens, close-knit teams, and no corporate layers between you and the decisions. We’re all about the guest. We want people walking out already planning their next visit. We’re always tinkering and getting better, and we’d rather do things properly than churn covers. Good food, good wine, good people, and nobody taking themselves too seriously.

What you’ll be doing

You’ll lead food across the whole group. That means setting the culinary direction and quality standard for each venue, developing menus that fit each brand, and leading the head chefs who run each kitchen day to day.

You’ll own food cost and kitchen performance across the group, build and train your teams, and work directly with the Director on where each venue goes next. This is a senior leadership seat with real responsibility, and a hands-on one.





- Setting and holding the food standard across four distinct venues

- Menu development, from casual diner to fine casual and private dining

- Leading, developing and promoting head chefs and kitchen teams

- Owning food cost, kitchen labour and supplier relationships

- Building kitchen systems, training and SOPs across the group

- Contributing to group strategy, new concepts and expansion

What we’re looking for

- Senior experience in quality Sydney venues

- Someone ready to step up into a multi-site role

- A hands-on leader who’s on the tools and in the kitchens with their team

- Creativity with food, and the ability to execute high-end dishes efficiently at volume

- A strong commercial head: you know your numbers and how to move them

- A leader who develops people, not just a excellent cook

- Range across styles, with a feel for pasta, grill and wine-led dining
