About the Role

ISS Defence is seeking an experienced and passionate Head Chef to lead our kitchen operations at RAAF Base Pearce in Bullsbrook, Western Australia. This is an exciting opportunity for an experienced culinary professional who is passionate about food, enjoys leading and developing people, and takes pride in delivering a consistently high standard of service. As Head Chef, you will oversee the day-to-day operations of the kitchen, ensuring meals are prepared and presented to a high standard while meeting client requirements, dietary needs, food safety standards and operational expectations.

Key Responsibilities
As Head Chef, you will be responsible for:
• Leading and overseeing daily kitchen operations and food service delivery
• Planning menus and coordinating food preparation and presentation
• Leading, mentoring and supporting kitchen team members
• Coordinating staffing and kitchen workflows to meet service requirements
• Managing ordering, stock control and the cost-effective use of ingredients
• Ensuring compliance with food safety, HACCP, hygiene and workplace health and safety requirements
• Maintaining a safe, organised and efficient kitchen environment
• Working closely with site management and key stakeholders
• Responding professionally to feedback and identifying opportunities to continually improve the food and customer experience
• Building a positive, inclusive and team-focused kitchen culture About YouWe're looking for someone who brings strong culinary experience along with the ability to lead and support a team. You will ideally have:
• Demonstrated experience as a Head Chef or senior chef within a commercial, institutional or high-volume kitchen environment
• Certificate III in Commercial Cookery or higher, or equivalent relevant culinary qualifications




• Strong leadership and people management skills
• Experience supervising, coaching and developing kitchen teams
• Sound knowledge of food safety standards and HACCP principles
• Strong organisational skills across stock control, ordering, cost management and kitchen operations
• Excellent communication and stakeholder management skills
• The ability to remain level-headed and organised in a fast-paced operational environment
• A reliable, flexible and team-oriented approach
• A strong commitment to food quality, safety and customer service Previous experience within Defence, facilities management or large-scale catering environments will be highly regarded. Minimum RequirementsDue to the nature and location of the role, successful candidates must:
• Be an Australian Citizen to meet Defence clearance requirements
• Hold or be able to obtain a current National Police Check
• Be able to successfully complete required pre-employment medical screening, including Drug & Alcohol testing
• Be able to obtain and maintain the required Defence clearance
