Zambrero Coopers Plains at 19 Kessels Road, Salisbury QLD, is a busy quick-service Mexican restaurant trading under Zambrero, the Australian-born brand that opened its first store in 2005 and has since grown to more than 350 restaurants across Australia, New Zealand, the United Kingdom, Ireland and the United States. The store builds every burrito, bowl, nachos, quesadilla and taco to order, using proteins slow-cooked for hours, fresh salsas and handmade guacamole, with gluten-free, vegetarian and vegan choices clearly marked across the menu. Customers come in from the surrounding Salisbury and Coopers Plains area to dine in and take away, and many more order through the Zambrero app and website, Uber Eats and DoorDash. The restaurant trades seven days a week, staying open until midnight from Thursday to Saturday, and every meal sold supports Plate 4 Plate, the brand’s giving programme that has helped provide more than 100 million meals to people in need. Our client is now looking for an experienced Retail Manager to join the team. With long trading hours seven days a week and steady dine-in, takeaway, app and delivery trade, the store needs a dedicated, hands-on manager to run the business day to day and lead the team on the floor. Key Responsibilities
• Recruit and induct new crew, train them on Zambrero recipes, build standards and customer service, and roster and supervise the team across day, evening and late-night shifts so that every service is properly covered and run to the brand’s expectations.




• Lead from the front counter during busy periods, helping customers choose between burrito styles, bowls, proteins and sauces, explaining gluten-free, vegetarian and vegan options and allergen information, and resolving feedback or complaints quickly and courteously.
• Decide the daily product mix and prep quantities, set par and stock levels for proteins, fresh produce, tortillas, sides, treats and drinks, and set the food presentation, speed of service and cleanliness standards the whole team works to.
• Prepare and manage the store budget, setting weekly sales, labour and food cost targets, and keep a close watch on wastage, portion control and operating expenses to protect the store’s margins.
• Run the store’s purchasing with approved suppliers, placing orders, checking deliveries for quality, temperature and accuracy, and setting local pricing, meal deals and catering quotes within the franchise pricing framework.
• Grow the store’s trade through local marketing, in-store promotions, the Zam Fam loyalty programme and national Zambrero campaigns, while promoting catering to nearby businesses, schools and community groups and keeping the store’s Uber Eats and DoorDash listings current.




• Keep accurate records of stock on hand, stocktakes, wastage, daily takings, cash and card payments and online and delivery platform sales, reconciling each day’s figures and reporting results to the owners.
• Make sure the store meets workplace health and safety and food safety requirements, including temperature logs, cleaning schedules, protected use of grills, fryers and kitchen equipment, safe chemical handling and incident reporting, and keep the store ready for franchise brand and compliance audits.
• Oversee opening and closing routines, including the late closes from Thursday to Saturday, cash security and equipment checks, and balance counter, app and delivery orders through each shift so service times stay on track. About you:
• At least 1 year of relevant experience in retail, quick-service or hospitality management.
• An AQF Associate Degree, Advanced Diploma or Diploma. Personal attributes:
