About the role

As an Assistant Restaurant Manager at 6HEAD, you’ll play a key role in the effective and profitable operation of the restaurant, working closely with the Restaurant Manager to maintain our high standards of food, service, safety and guest experience.

You’ll lead from the floor, develop the team and support the Restaurant Manager across daily operations, financial performance, labour and stock control, compliance and KPIs. In the Restaurant Manager’s absence, you’ll take responsibility for the venue and ensure the team continues to deliver the 6HEAD experience.

Your responsibilities will include:

- Leading, motivating and developing the restaurant team
- Maintaining high standards of food, service and guest satisfaction
- Managing daily opening, closing and service procedures
- Supporting training, briefings, rosters and team development
- Managing labour, stock, wastage, breakage and cost of goods




- Monitoring financial performance and working towards budgets and KPIs
- Managing guest, staff and supplier feedback
- Maintaining OHS, RSA, food safety, cleanliness and safety standards
- Supporting performance management and staff development
- Taking ownership of the restaurant in the Restaurant Manager’s absence

What we’re looking for

- Minimum 4 years’ management experience in a similar high-end/high-volume restaurant environment
- Proven experience leading and developing a high-performing team
- Strong understanding of restaurant financials, budgets, P&L;, labour and cost control
- Experience working with KPIs and company objectives
- Strong planning, problem-solving and decision-making skills
- Excellent communication and organisational skills
- WSET Level 2 or 3 preferred
- Bachelor’s degree advantageous, particularly in Hospitality, Business or a related discipline
- Hospitality qualification advantageous
- Genuine passion for food, wine and premium hospitality
- Current RSA Certificate
- Excellent personal presentation and hygiene standards
- Ability to work a rotating 7-day roster, including nights, weekends and public holidays
