A taste of Cibaria

Located within Manly Pacific Hotel, overlooking Sydney’s Northern Beaches, Cibaria celebrates the many flavours of Italy through its antipasteria, salumeria, spaghetteria, bisteccheria, forneria, cruderia, friggitoria and gelateria.

Across multiple levels and 350 seats, the experience moves from morning coffee at the Caffetteria to lively lunches, memorable dinners, private celebrations and late-night drinks at 55North Bar by Cibaria.

It’s an ambitious venue with the energy, variety and scope to keep a passionate chef inspired.

Make your mark in our kitchens

Working alongside our Head Chefs, you’ll help lead a large, dynamic brigade across kitchens and sections including Forneria, Braceria, Spaghetteria, Caffetteria and Pasticceria.

This is an opportunity to build your leadership, contribute ideas and help a talented team deliver exceptional food at pace. From preparing for a busy service to developing the next generation of chefs, your contribution will be felt every day.

In this role, you will:

- Lead by example, bringing confidence, organisation and energy to the kitchen.
- Oversee preparation and service, delivering consistent quality, flavour and presentation.
- Contribute to menu development with creativity and respect for Italian cuisine.
- Manage stock, ordering,



rostering and labour costs with a sound commercial approach.
- Coach and develop your team, building skills and pride in their work.
- Maintain excellent food safety, hygiene and kitchen presentation standards.

What you’ll bring

- You’re a chef who cares deeply about the food you serve and the people you work with. You thrive in a busy kitchen, communicate clearly and know how to bring out the best in a team.
- Full Australian working rights.
- 1–3 years’ experience in a similar role within premium dining and/or relevant trade qualifications.
- A strong background in Italian cuisine.
- Experience contributing to menu creation.
- A solid understanding of food costs, stock management and labour controls.
- Composure under pressure and a sharp eye for detail.
- Professional presentation and grooming.

We’d also love to see:

- Fresh pasta, pastry, butchery and/or seafood preparation skills.
- Food Safety Supervisor and Food Handling certificates.
- First Aid Certificate.
