We are on the hunt for an experienced chef to lead our functions team in strengthening and maintaining our high-quality Functions and Events offering. With one of the largest Auditoriums in the Illawarra region, we can host intimate gatherings of 20 up to large scale plated events of 500. Due to our capability, we are renowned as a leading Functions and Events venue in the Illawarra.
This is a full-time position with hours depending on business demands. The role will involve regular weekend and night work but will offer flexibility to the right applicant.
Dutiesand Responsibilities
Preparing high-quality dishes for various functions and events
Oversee all kitchen operations, including supervision of cooks, apprentices and kitchen hands
Manage rosters effectively to meet business demand
Ordering and organising stock as required
Manage the freshness and quality of ingredients, and ensure all products are delivered to the customer at a high standard
Assist in the creation and planning of function menus on a seasonal basis
Ensure quality and consistency across all products
Inspect and maintain supplies, equipment,



and work areas for cleanliness and functionality
Monitor and comply with WHS regulations, HACCP processes, and procedures regarding food safety
Opportunities to work in other kitchens within the club to expand skills and knowledge
Skills and Experience
Skills required but not limited to include:
Food Safety Supervisor Qualification (mandatory)
Proven leadership experience in a fast-paced kitchen setting and the ability to motivate and build a team
High attention to detail
Expert level knowledge in stock control, ordering, menu planning, new product development
Experience managing catering financials, such as Food Cost % and Wage Cost % in a Function Kitchen, essential
Strong understanding of HACCP & WHS regulations
Experience with 'My Local Foodie' beneficial but not essential
Excellent personal presentation
Fantastic communication skills
Ability to follow instructions in a prompt and efficient manner
