Ashin, a Japanese restaurant located in Campsie, NSW, is seeking a dedicated and skilled Full Time Chef to join our kitchen team. The successful candidate will be responsible for preparing and cooking high-quality Japanese dishes while maintaining excellent standards of food quality, presentation, hygiene, and kitchen operations.

Duties and Responsibilities

- Prepare and cook Japanese hot dishes to the restaurant’s quality and presentation standards.
- Prepare ingredients, maintain freshness, and follow portioning guidelines.
- Assist with menu planning and the development of new dishes and seasonal menu items.
- Follow recipes, cooking instructions, and plating standards.
- Maintain a clean, organised, and sanitised workstation and kitchen.
- Comply with all applicable food safety, hygiene, and Work Health and Safety (WHS) requirements.
- Monitor cooking times, temperatures, and food quality to ensure consistency.
- Assist with stock rotation, inventory management, food storage, and receiving deliveries.
- Monitor food costs, minimise waste, and use ingredients efficiently.




- Work cooperatively with kitchen staff to ensure smooth and timely food service.

Required Qualifications and Experience

- Certificate IV in Commercial Cookery.
- Diploma of Culinary Arts or an equivalent relevant culinary qualification.
- Minimum of two years’ experience in a commercial kitchen.
- Experience in Japanese cuisine is highly regarded.
- Knowledge of menu planning, food preparation techniques, and food cost control.
- Strong understanding of food safety, hygiene, and safe food-handling practices.
- Ability to work efficiently in a fast-paced kitchen environment.
- Good communication skills, teamwork, and attention to detail.

Salary and Employment Conditions

- Annual Salary: AUD $80,000 plus superannuation.
