Our client, Townsville Charcoal Chicken at Garbutt, QLD, is looking for an experienced Cook to join the team.

Townsville Charcoal Chicken is a local food business serving the Townsville community. It is built around flame-grilled charcoal chicken, served with fresh sides, wraps and salads. The business is known for juicy, flavourful chicken and a fresh approach to everyday meals.

Your new role

This is a full time opening in a busy kitchen where flame-grilling is the heart of the menu. It suits a skilled, dependable cook who takes pride in consistent quality and enjoys working as part of a team.

In this role you will:

- Prepare and cook charcoal chicken and the rest of the menu to the standard customers expect, batch after batch.
- Control the heat of the charcoal grills, ovens and other cooking equipment so that every item is cooked safely, evenly and on time.
- Check each delivery of chicken, produce and other ingredients on arrival, and set aside anything that does not meet quality standards.
- Season and baste chicken and other dishes during cooking, tasting and adjusting so the flavour stays consistent.
- Prepare fresh sides, salads and fillings for wraps, keeping portions and presentation uniform.
- Portion cooked food, plate or pack it, and finish each order with the correct gravies, sauces and garnishes.
- Prepare meals for customers with special dietary needs or allergies, taking care with ingredients and avoiding cross-contamination.
- Store raw and cooked food in refrigerated and other temperature controlled areas,

labelling and rotating stock to keep it safe and fresh.
- Monitor and record fridge, freezer and hot-holding temperatures in line with food safety requirements.
- Marinate and prepare chicken ahead of service so the kitchen is ready for busy periods.
- Contribute ideas for menu items, specials and seasonal sides, and estimate the quantities of chicken and produce needed for upcoming trading days.
- Help manage stock levels and ordering to keep waste low and costs under control.
- Train and guide kitchen team members and apprentices in cooking techniques, hygiene and safe work practices.
- Keep the kitchen, grills and equipment clean, and follow all workplace health and safety procedures.
- Work closely with front-of-house staff to keep orders accurate and moving during peak times.

About you

- A minimum of 1 year of experience working as a Cook
- A Diploma in Commercial Cookery or higher
- A strong understanding of food safety and hygiene
- A reliable team player who stays calm under pressure
- Careful attention to detail in flavour, portion size and presentation
- Good organisation and time management in a fast-paced kitchen
- A positive attitude and willingness to share knowledge with others

Salary & Employment Conditions:

- Permanent, full-time position (38 hours per week)
- $75,000 to $85,000 plus superannuation per annum

If this sounds like you, we'd love to hear from you! Please be sure to combine a covering letter addressing the key criteria set out above as the first page of your resume.
