We are seeking a passionate, knowledgeable and motivated Assistant Sommelier Manager to support our Head Sommelier in delivering exceptional wine experiences, driving beverage performance and developing a high-performing team.

Key Responsibilities

- Support the Head Sommelier in overseeing daily wine and beverage operations.
- Deliver exceptional, personalised wine service and premium guest experiences.
- Drive beverage sales through expert wine recommendations, food pairings and engaging storytelling.
- Train, mentor and develop sommeliers and restaurant team members.
- Assist with wine list management, inventory control, stocktakes and beverage profitability.
- Maintain exceptional wine service, presentation and preservation standards.
- Support and host exclusive wine dinners, tastings and VIP experiences.
- Lead wine operations in the Head Sommelier’s absence.

About You

- 2–3 years’ experience in a sommelier or senior wine service role within premium dining.
- Strong knowledge of Australian and international wines,



particularly French and Italian regions.
- WSET Level 2 or equivalent wine knowledge preferred.
- Current RSA certification essential.
- Excellent food and wine pairing knowledge, with an appreciation for premium beef and steak.
- Strong leadership, communication and guest engagement skills.
- Commercial awareness of beverage sales, stock management and cost control.
- A genuine passion for wine, hospitality and developing others.
