South Wharf

Chef de Partie (Full Time)

The Boatbuilders Yard | South Wharf, Melbourne

At The Boatbuilders Yard, we believe excellent kitchens are built by great leaders. We are seeking a driven, relentless, and highly motivated Chef de Partie who understands that leadership is more than running a section. It is about developing people, setting standards, creating accountability, and elevating the performance of the entire team.

This role is ideal for a chef who combines culinary excellence with a genuine passion for coaching, mentoring, and inspiring others. We are looking for someone who leads from the front, embraces responsibility, and is committed to helping those around them grow professionally and personally.

Position Summary

As a Chef de Partie, you will be responsible for the operational success of your section while acting as a leader and mentor within the kitchen brigade. You will be expected to foster a culture of continuous improvement, accountability, teamwork, and excellence.

The successful candidate will demonstrate a strong coaching mentality in everything they do, viewing every service, challenge, and interaction as an opportunity to develop both themselves and their team.

Key Leadership Responsibilities

- Be a part of a large management team who set goals and have a "lets get it done" mentality.
- Lead your juniors with professionalism, urgency, and attention to detail.
- Set the standard for work ethic, preparation, consistency, and execution.
- Coach, mentor, and develop junior chefs through daily guidance, feedback, and hands-on training.
- Create an environment where learning, growth, and accountability are embedded within the team's culture.
- Identify development opportunities for team members and actively support their progression.
- Deliver constructive feedback with the goal of improving individual and team performance.
- Lead by example during high-pressure services, displaying composure, resilience, and professionalism.
- Promote a positive, respectful,

and high-performing workplace culture.
- Drive continuous improvement across systems, standards, communication, and service execution.
- Hold yourself and others accountable for maintaining exceptional operational standards.

Culinary & Operational Responsibilities

- Take ownership of your prep designated kitchen section and ensure its smooth operation.
- Maintain consistency in food quality, presentation, and portion control.
- Support menu execution and contribute ideas for future menu development.
- Manage stock rotation, ordering, and inventory control.
- Monitor food costs and minimise waste wherever possible.
- Maintain strict adherence to food safety, hygiene, and workplace health and safety requirements.
- Work collaboratively with the Head Chef, Sous Chefs, and wider kitchen brigade to achieve service excellence.

About You

You are a leader first and a chef second.

You understand that your success is measured not only by the quality of your section but also by the growth and performance of the people around you.

You are:

- Relentlessly driven to achieve excellence.
- Passionate about developing and mentoring others.
- A natural communicator who earns respect through actions rather than title.
- Accountable, disciplined, and highly organised.
- Resilient and solution-focused under pressure.
- Committed to fostering a culture of learning and continuous improvement.
- Able to challenge and support team members equally to help them reach their potential.
- Dedicated to maintaining the highest standards every day, regardless of circumstances.

Skills & Experience

- Minimum 5 years' experience as a Chef de Partie or equivalent leadership experience within a professional kitchen.
- Demonstrated ability to lead, mentor, and develop junior team members.
- Strong understanding of modern kitchen operations and service management.
- Excellent communication and interpersonal skills.
- Proven ability to work effectively in high-volume and fast-paced environments.
- Strong knowledge of food safety and HACCP principles.
- Relevant commercial cookery qualifications preferred.

What Success Looks Like in This Role

Success in this position is not simply measured by delivering great food. It is measured by the standards you create, the culture you help build, and the people you develop.

The ideal candidate is someone who takes ownership of outcomes, embraces challenges, drives performance, and leaves every team member better than they found them. They are relentless in their pursuit of excellence while never losing sight of the importance of coaching, mentorship, and leadership.
