Bagel Baker, Wood-Fired Oven | Training Provided | Mile End Bagels

Mile End is Australia's first wood-fired Montreal-style bagelry. We're looking for bakers who want to learn this craft properly. Shifts start between 3am and 4am, finishing before lunch. It's hot, physical and quick. Weekends are essential.

Key responsibilities
Hand-roll and shape bagels to spec, hundreds a shift
Boil them in honey water
Bake them on wooden boards in a live wood-fired oven
Keep the bakery clean, organised and food protected
Work as part of a tight crew through the morning bake

About you
Are reliable. The bake can't start without you, so you turn up on time, every shift.
Care about consistency, so every bagel looks like the last one
Are positive with your hands and quick to learn




Like working in a small team that backs each other
Have bakery or kitchen experience (a bonus, not a must)

Mile End is Australia's first wood-fired Montreal-style bagelry. Our oven was built by the same Canadian stonemasons behind St-Viateur and Fairmount, the two most famous bagel bakeries in Montreal. Every bagel our four stores sell is rolled, boiled and baked by hand, right here in Fitzroy.
