Domain Botanical Business – South Yarra VICThis is a hands-on Bar Manager position at Gilson, an Italian-influenced all-day restaurant in South Yarra opposite the Royal Botanic Gardens.
You'll spend much of your time behind the bar during service, keeping drinks moving quickly and to standard for a busy restaurant floor, while taking ownership of how the bar operates.Key responsibilitiesWork the bar during service, producing drinks for the floor quickly, accurately, and consistentlyManage beverage ordering, supplier relationships, and par levelsRun regular stocktakes and maintain tight stock control to minimise wastage and varianceTake accountability for beverage COGS and bar-related costsKeep the bar clean, organised, and well maintained, including equipment, glassware, and beer linesTrain and support bar staff so the bar runs smoothly on every shiftWork closely with the management team on rostering, events, and venue performanceAbout youExperience running or senior bartending in a busy, quality venueHighly organised, with strong stock control and ordering experienceFast, productive, and calm behind a busy dispense barCommercially minded: you understand COGS, wastage, and marginsTakes pride in a clean, well-maintained,
