Job description

Overview

Big flavours. A brand-new 170-seat venue. A team that feels like family.

We’re bringing elevated Malaysian dining to Rouse Hill, and we’re looking for a skilled Wok Chef to join our opening kitchen team. This is your chance to be part of Makan from day one and help deliver the bold flavours, quality and consistency that will keep our guests coming back.

If you take pride in your cooking, work confidently on a busy wok section and love being part of a strong kitchen team, we’d love to hear from you.

The Role

You’ll take ownership of the wok section, preparing and cooking dishes to Makan’s recipes, presentation standards and service expectations. Working closely with the kitchen leadership team, you’ll keep your station organised, manage preparation and deliver consistent dishes throughout busy lunch and dinner services.

In the lead-up to opening, you will:

- Participate in kitchen training, menu tastings and trial services
- Learn and practise Makan’s recipes, cooking methods and plating standards
- Help set up the wok section, including equipment, utensils and ingredient storage
- Establish preparation routines, portion sizes and stock requirements with the kitchen team
- Support a smooth soft launch and opening

Once we’re open, you will:

- Run the wok section efficiently throughout service
- Prepare and cook Malaysian dishes with consistent flavour, quality and presentation
- Manage heat, timing and multiple orders while maintaining cooking standards
- Complete daily preparation and keep your section stocked and ready for service
- Follow recipes and portion controls to minimise waste and support food cost targets
- Check ingredient quality, rotate stock and maintain correct labelling and storage
- Follow food safety, hygiene and workplace safety procedures
- Keep equipment and work areas clean throughout service and at closing
- Communicate clearly with the kitchen and front-of-house teams about timing, availability and dietary requests
- Support other kitchen sections when required

What you’ll bring

- Previous experience as a Wok Chef or Wok Cook in a busy restaurant
- Strong wok skills, including heat control, speed and timing
- Experience with Malaysian cuisine highly regarded; experience in other Asian cuisines also welcome
- The ability to follow recipes and maintain consistency under pressure
- Good preparation, organisation and stock rotation habits
- A sound understanding of food safety, hygiene and allergen handling
- A positive attitude and willingness to learn and support the team
- Appropriate working rights in Australia
- Availability for lunch and dinner shifts, including weekends and public holidays

For us, these are non-negotiable:

- Honesty and integrity: You take responsibility for your work and communicate openly.
- Reliability and punctuality: You arrive on time, prepared and ready for service.
- Pride in your cooking: Every dish receives the care and attention our guests deserve.
- Respect and teamwork: You work professionally with everyone in the venue.
- A family-oriented approach: We look after our people and expect our team to look after one another.
