Chotto Matte is coming to Bondi, and we’re looking for the people who’ll make it unforgettable.

Born in London in 2013, Chotto Matte is a global restaurant group known for bold Japanese-Peruvian (Nikkei) cuisine, signature cocktails, striking street-art interiors and an atmosphere that runs on music and energy. After London, Miami, Toronto, Doha and beyond, we’re opening our first Australian venue, and we want an opening floor team who live for great service.

The role

You won’t just carry plates here. You’ll guide guests through a menu of sushi, ceviche, robata-grilled dishes and Nikkei small plates, recommend the right cocktail, and keep the energy high from lunch to late. You’ll be part of the team that sets the standard for Chotto Matte in Australia from day one.

What you’ll do

- Deliver warm, polished, high-energy service in a quick-paced premium venue

- Learn our menu and drinks list inside out and make confident recommendations

- Work closely with the bar and kitchen to keep service smooth

- Look after guests’ dietary needs and special requests with care





- Help create the buzz that makes guests want to come back

What we’re looking for

- Experience as wait staff in a busy restaurant, ideally premium casual or fine dining
- A genuine love of hospitality and people

- Confidence on the floor, plus calm under pressure
- A team player who brings energy to every shift

- Availability across nights, weekends and public holidays
- A current NSW RSA (or willingness to get one before you start)

- The right to work in Australia

Experience with Japanese, Peruvian or Nikkei cuisine, or a strong interest in food and drinks, will be highly regarded.
