Key Responsibilities

- Prepare, season and cook a range of dishes in accordance with Bartiga's menu, recipes and established preparation methods.
- Prepare dishes reflecting Bartiga's Up-to-date Australian cuisine and Southeast Asian culinary influences.
- Examine ingredients and foodstuffs to ensure appropriate quality and freshness before preparation and cooking.
- Prepare ingredients for cooking by washing, peeling, cutting, chopping, slicing and portioning vegetables, meat, seafood and other food items in accordance with recipes and menu requirements.
- Prepare sauces, dressings, marinades, garnishes and other components required for daily menu preparation.
- Follow standard recipes and portioning requirements to maintain consistency in taste, quality, presentation and serving size.
- Monitor cooking processes and regulate the temperatures of ovens,



grills and other cooking equipment to ensure food is cooked appropriately.
- Monitor stock levels, assist with ordering kitchen supplies and maintain appropriate stock rotation practices.
- Portion, plate and garnish prepared dishes in accordance with Bartiga's presentation and service standards.
- Prepare food for lunch and dinner service, including à la carte, dessert, banquet and function dining, in accordance with the restaurant’s service requirements.
- Store raw and prepared food appropriately and maintain required food storage and temperature-control practices.
- Maintain cleanliness and organisation of kitchen workstations, cooking equipment and utensils.
- Prepare and modify dishes to accommodate specified dietary requirements and food allergies where required.

Good Salary Package: $80,000 plus Super
