Job Description
Minor Hotels Australasia is seeking an experienced and commercially minded Director of Food & Beverage, Australasia to join our Brisbane Corporate Head Office. This senior leadership role will shape and lead the Food & Beverage strategy across a portfolio of 69 hotels across Australia and New Zealand, driving commercial performance, operational excellence, guest experience and sustainable growth. Working closely with Operational Leaders, Cluster General Managers, General Managers, Finance, People & Culture and Corporate Services, this role serves as the enterprise lead for Food & Beverage, providing strategic direction, commercial guidance and operational support across restaurants, bars, conferencing, events, room service and other Food & Beverage outlets.

Key Responsibilities
include:
• Lead the Food & Beverage strategy across Australia and New Zealand.
• Drive revenue growth, profitability, labour productivity and cost optimisation.
• Partner with operational leaders to improve outlet performance and guest experience.




• Establish enterprise-wide Food & Beverage standards, frameworks and best practices.
• Use performance insights to identify opportunities and drive action.
• Lead openings, refurbishments, new concepts and operational transformation.
• Build capability, succession and leadership across Food & Beverage teams.
• Develop strategic supplier partnerships and ensure appropriate operational governance. Qualifications To be successful you will require the following

experience:
• Extensive senior Food & Beverage leadership experience across a large, multi-site hospitality portfolio.
• Proven success improving revenue, profitability, labour productivity and cost performance.
• Strong operational expertise across restaurants, bars, conferencing and events.
• Experience establishing enterprise-wide standards and driving transformation.
• Experience with openings, refurbishments, current concepts or operational turnarounds.
• Strong commercial and financial acumen with a data-led approach to performance.
• The ability to influence senior operational and corporate stakeholders across dispersed teams.
• Flexibility to travel regularly across Australia and New Zealand.
