Job description:

We are an authentic, high-quality Italian venue looking for 2 passionate, trade-qualified Commercial Cooks to join our energetic kitchen team on a full time basis.

The ideal candidates will bring solid experience in traditional Italian culinary techniques, showcasing high attention to detail, efficiency, and a deep appreciation for authentic Italian food preparation.

Key Duties & Responsibilities

Artisanal Pasta & Gnocchi Making: Handcraft traditional fresh egg pasta (such as fettuccine and tagliatelle) and prepare handmade gnocchi from scratch, maintaining consistent texture and quality control.
Traditional Sauce Preparation: Prepare authentic, slow-cooked Italian sauces from scratch, including classic Napoletana, rich traditional Bolognese ragù, and seasonal regional sauces.

Kitchen Operations: Operate commercial kitchen machinery (including blast chillers, vacuum-sealing equipment, and high-speed ovens) and assist with menu development and specials.

Stock & Storage Management: Monitor stock levels, handle raw ingredients properly, enforce proper food rotation (FIFO), and minimize kitchen waste.

Food Safety & Hygiene:



Strictly maintain standard food safety protocols, proper sanitization, and strict compliance with Australian WHS and food hygiene regulations.

Required Qualifications & Experience

Formal Qualification: Must hold a minimum of Certificate III and Certificate IV in Commercial Cookery (or equivalent recognized international qualification).

Experience: Minimum of 2 years of hands-on experience in a rapid-paced Italian restaurant or commercial kitchen environment.

Skills: Demonstrated expertise in fresh pasta making, handmade gnocchi, and authentic sauce production.

Availability & Work Ethic: Ability to work full time operational hours, including weekends and early morning prep shifts as required. Strong teamwork, time management, and communication skills under pressure.
