About Gilson

Gilson is one of Melbourne’s most loved neighbourhood restaurants, sitting opposite the Royal Botanic Gardens on Domain Road in South Yarra. We’re a busy all-day venue with a strong local following,



and part of a growing hospitality group with serious ambitions for the next few years.

The Role

You’ll keep the drinks flowing for a busy restaurant floor, which means speed, accuracy and organisation matter just as much as personality. Our bar runs primarily as a service bar for the restaurant, so you’ll be the engine behind every table’s experience.

This role includes

- Preparing and serving wine, beer, cocktails and non-alcoholic drinks quickly and to spec

- Keeping up with dockets during peak service without letting standards slip

- Looking after guests seated at the bar with warm, attentive service

- Knowing the drinks list well enough to make genuine recommendations

- Keeping the bar clean, stocked and set up, including opening and closing duties

- Assisting with stock rotation and deliveries

- Working closely with the floor team and kitchen to protect timing

We’re Looking For Someone Who

- Has previous bartending experience in a busy venue

- Works fast and stays calm and organised under pressure

- Is warm, personable and genuinely enjoys looking after people

- Has a current RSA (Victoria)

- Has versatile availability, including weekends

- Is keen to grow their wine and beverage knowledge

- Brings a good attitude every shift and is coachable
