Join the Demon Team: Ramen Cook / Chef Wanted at Kikanbo Melbourne!

Kikanbo Melbourne is looking for a passionate, high-energy, and disciplined Ramen Cook / Chef to join our busy kitchen team on La Trobe Street. If you thrive in a fast-paced environment and have a deep respect for authentic Japanese kitchen culture, precision cooking, and bold flavours, we want to hear from you!We are famous for our intense, multi-sensory ramen experiences—blending rich broths with our signature Kara (chilli heat) and Shibi (numbing sansho pepper) spice levels that range all the way up to "Devil" and "Demon". As part of our back-of-house team, you will be the force behind every perfect, steaming bowl we serve.

Key Responsibilities:

- Line Cooking: Manage high-volume noodle boiling, accurate protein portioning (tender Angus beef and pork chashu), and complex soup assembly under pressure.
- Quality Control: Ensure consistency in presentation, visual appeal, and exact spice-level execution for every single ticket.
- Kitchen Operations: Maintain strict hygiene, food safety standards, and deep-cleaning schedules according to food compliance regulations.
- Teamwork: Work closely with the Head Chef and front-of-house team to ensure exceptionally fast and seamless ticket times.

What We Are Looking For:

- Experience:

Previous experience in a fast-paced commercial kitchen, busy casual diner, or Japanese restaurant environment is highly preferred.
- Precision & Speed: Exceptional knife skills, strong spatial awareness on the line, and physical stamina to handle busy rushes.
- Attitude: A serious, disciplined, and proactive individual who treats food preparation with absolute respect.
- Flexibility: Availability to work a rotating roster including late nights, weekends, and holiday periods.
- Right to Work: Must hold valid working rights in Australia.

Note: While prior experience with Japanese cuisine or ramen operations is a major advantage, we are ultimately looking for the right work ethic and are fully willing to train candidates who possess strong foundational culinary skills. Please submit your Resume/CV along with a brief cover note detailing your kitchen experience and weekly availability directly through email [email protected]

What happens next?

Our management team will review all submissions. The right candidates who match our requirements will be contacted directly to arrange an interview and a practical kitchen trial. We thank all applicants for their interest in joining Kikanbo!
