About the role

Jacka Brothers Brewery is seeking a passionate, reliable, and skilled Sous Chef to join our dynamic kitchen team. In this role, you will take ownership of an assigned kitchen section, ensuring the consistent delivery of high-quality bistro and brewery-style dishes. You will work closely with the Executive Chef to maintain exceptional food safety standards, manage station prep, and mentor junior culinary staff in a fast-paced, high-volume environment.

Key responsibilities

- Oversee the daily operations, preparation, and execution of dishes within your designated stations

- Prepare, cook, and plate high-quality bistro and brewery meals according to established recipes, portion controls, and presentation standards

- Ensure all ingredients, garnishes, and tools are meticulously prepped, organized, and stocked ahead of service peak times

- Guide, support, and direct junior kitchen staff, including kitchenhands, fostering a collaborative team culture

- Monitor stock levels within your section, report ordering needs, rotate inventory (FIFO), and actively minimize food waste





- Maintain strict adherence to food hygiene legislation, work health and safety (WHS) protocols, and station cleanliness

About you

- Minimum 2+ years of experience working as a Sous Chef in a fast-paced, busy kitchen environment (brewery, pub, or casual dining experience preferred)

- Certificate III or IV in Commercial Cookery (or equivalent international trade qualification)

- Strong knife skills, comprehensive knowledge of various cooking techniques, and ability to handle high-volume service seamlessly

- Excellent verbal communication skills, a team-player attitude, and the physical stamina required for long service shifts

- Solid understanding of food safety guidelines, allergens, and kitchen sanitation rules
