Calling All Positions: Fat Pomelo Balgowlah Is Opening Soon!

We’re a new restaurant about to open our doors at Balgowlah Village, and we’re building our team from the ground up. Fat Pomelo is a up-to-date South East Asian restaurant serving bold, produce-driven food with genuine hospitality, and we’re here to build a restaurant that lasts, not to chase trends.

We welcome applications for all roles. We’re especially looking for waitstaff, bartenders and a manager, but if you love hospitality and think you’d be a great fit, we’d love to hear from you.

Key responsibilities

Waitstaff:

- Welcome guests and make them feel at home from the moment they walk in
- Take orders and guide guests through the menu, with recommendations and dietary questions
- Run food and drinks, and keep tables cleared and reset during service
- Work as part of the floor team so every guest has a smooth night
- Help with opening and closing duties

Bartender:

- Make cocktails with skill and consistency, and help develop new drinks for the menu
- Pour wine and beer, and recommend wines to pair with our food
- Keep the bar clean, stocked and organised throughout service
- Help with stock counts and let us know when supplies run low
- Follow RSA responsibilities at all times

Manager:

- Lead the floor during service and keep the night flowing




- Manage and train the front-of-house team, from onboarding new staff to building their skills over time
- Lead by example: be the first to jump in when it's busy and set the standard for how we treat guests
- Engage with guests, build relationships with regulars, and resolve any issues with warmth and confidence
- Build rosters and manage labour costs
- Oversee opening and closing, cash-up and stock
- Work closely with the kitchen and the owner to keep standards high

About you

Waitstaff

- Some experience serving customers required

Bartender:
- At least 1 year of bar experience, with strong cocktail skills
- Wine knowledge is a big plus
- RSA required

Manager:
- At least 2 years of hospitality management experience
- Friendly and approachable
- Comfortable with guests
- Loves bringing out the best in a team
