RAKKAS is seeking an experienced and motivated Chef & Cook to join our busy kitchen team in Kingston, ACT.
We are a contemporary Turkish restaurant offering traditional Turkish flavours combined with Australianproduce and contemporary fine-dining techniques.

Position 1: Chef

Key Responsibilities

1. Plan, prepare, and cook a variety of dishes in accordance with the restaurant’s menu and quality standards.
2. Supervise daily kitchen operations to ensure consistency, efficiency, and food quality.
3. Develop and update seasonal menus while maintaining food cost control.
4. Monitor food quality at all stages of preparation and presentation.
5. Manage stock control, including inventory management, stock rotation, and minimisation of food wastage.
6. Ensure compliance with food safety, hygiene, and workplace health and safety regulations.
7. Train and supervise cooks and kitchen assistants to ensure smooth kitchen operations.

Ensure proper use and maintenance of kitchen equipment.

Position 2: Cook

Key Responsibilities

1. Prepare and cook menu items according to recipes and established standards
2. Assist with food preparation including cutting, marinating and portioning ingredients
3. Monitor cooking times and temperatures to ensure food quality and safety
4. Maintain food quality, presentation and portion control
5. Ensure proper food storage and compliance with food safety regulations
6. Assist with stock rotation and minimise food wastage
7. Maintain cleanliness of kitchen workstations, utensils and equipment
8. Work collaboratively with kitchen staff during service periods
9. Follow instructions from the Chef and support daily kitchen operations
