Rowanos Italian Restaurant – Croydon South VIC
Rowanos Restaurant is an established Italian restaurant known for quality food, exceptional customer service and a welcoming dining experience. We are seeking an experienced, motivated and hands-on Restaurant Manager to lead our Croydon South team and oversee daily operations. The Croydon South venue is a large, busy restaurant featuring multiple dining areas, two bars, private function facilities and seating for approximately 160 guests.
Key responsibilities
Manage the day-to-day operations of the restaurant, ensuring smooth and effective service
Lead, train, motivate and supervise front-of-house staff
Prepare staff rosters, manage labour costs and maintain appropriate staffing levels
Deliver exceptional customer service and professionally handle customer enquiries, feedback and complaints
Oversee reservations, large group bookings, private functions and special events
Work closely with the kitchen team to maintain food quality, presentation and service efficiency
Monitor restaurant sales, revenue targets, operating expenses and profitabilityManage beverage stock, ordering, inventory control and supplier relationships
Implement strategies to increase sales, encourage upselling and improve customer satisfaction
Ensure compliance with food safety, liquor licensing, RSA and workplace health and safety requirements
About you




Minimum 2–3 years of experience in restaurant management or a similar leadership position
Previous experience managing a busy, high-volume restaurant
Strong leadership, communication and organisational skills
Sound understanding of restaurant financial performance, labour costs and stock management
Experience managing functions, group bookings and special events
Ability to work effectively under pressure while maintaining excellent service standards
Strong problem-solving skills and a proactive, hands-on management approach
Experience with POS systems, reservation platforms and staff rostering software
Current Victorian RSA certificate
Availability to work evenings, weekends and public holidays as required
