The Ocean Grove Hotel is the only pub in town and a cornerstone of the local community with a family friendly fun atmosphere. We're hiring an experienced head chef with management responsibilities - with an attractive starting salary of $80,000 under clause 25 of the Hospitality Industry General Award.
MANDATORY REQUIREMENTS You will have successfully progressed through the three tradesperson grades of the award Levels 4 to 6 (commi chef, demi chef, chef de partie). It is expected that you have worked full-time in a role managing staff while working in the kitchen, preferably in a loaded salary package such as clause 25 of the Hospitality Industry
General Award. Of course, you will be fully qualified with a Diploma in Hospitality Management and Certificate IV in Kitchen Management after completing a Certificate III in Commercial Cooking. EXPERIENCE
At least two years proven experience in busy high volume commercial kitchens serving traditional pub fare (steaks, roasts, chicken parmigiana, fish and chips, pasta, pizza). You will have managed kitchen hands and lower grade cooks (levels 1 to 3) to produce high quality meals in short time frames. You have a history of menu development and specials, especially function menus for events within a total budget to minimise delays and maximise satisfaction.
You ensure portion control, stock rotation and waste minimisation.
You have undertaken stock management & inventory control with demonstrated understanding of profitability and how menu items need to be priced and how to ensure cost of goods and staff ratios remain within operational range. You offer team leadership with strong communication skills.
You live and breathe food safety & HACCP compliance - the seven principles are ingrained in everything you do (yes, we will ask you at interview). Unlike the traditional chef stereotype in movies, you work with your team with a smile and mentor with a friendly chat and providing clear examples to follow. You leave your station clean and presentable at end of shift.
You'll be rostered starting now across day shifts, evenings, weekends and public holidays. Your pay is fully loaded (*) under the award so you are expected to work 38 hours a week across five days a week plus reasonable overtime. We only employ people "on the books" with full award protections and advantages.
This is a full-time role expected to form the core of our Christmas holiday team so you must be available from 26 December to 26 January (Boxing Day to Australia Day). If you're looking to hospitality as a career (including the possibility of further promotion) and want to earn a steady income, please apply via Indeed today. Please include evidence of your qualifications and work references for your experience.
These will be checked. If you meet the above criteria, we'll certainly be in touch for an in-person interview at the pub! Pay: From $80,000.00 per year
