Venue Manager - The Milton Rooftop & Sports Bar

The Milton Rooftop & Sports Bar is seeking an experienced Venue Manager to lead our pub, rooftop and basement entertainment spaces on Caxton Street, Brisbane. This is a hands-on leadership role for someone who can deliver great service, develop a capable team and take ownership of the venue's commercial performance.

Reporting directly to the owners, you will oversee daily operations across bars, food service, live sport, entertainment and functions.

Key responsibilities

Lead service on the floor, including peak trading periods, nights and weekends.

Recruit, train and develop staff and duty managers, with clear expectations and accountability.

Manage rosters and labour costs in line with forecast trade.

Oversee stocktakes, ordering, beverage costs, wastage and cash controls.

Deliver accurate weekly reporting on sales, wages, cost of goods and operational performance, with clear actions to address issues.

Work closely with the head chef, events and marketing teams to grow trade and deliver successful functions and activations.

Maintain venue presentation, service standards, safety and liquor licensing compliance.

Manage supplier relationships, maintenance and operational follow-through.

About you

Proven experience managing a busy pub, bar or comparable hospitality venue.

Solid financial understanding, including labour management,



stock control and profitability.

A confident, approachable leader who trains their team and follows through.

Experience managing major event days, functions and entertainment.

Strong organisation, communication and reporting skills.

A proactive approach to building repeat business and improving the guest experience.

Experience with Deputy and Impos would be an advantage.

The Milton Rooftop & Sports Bar brings together a pub vibes, rooftop drinks, live sport, food and entertainment on Brisbane’s Caxton Street, close to Suncorp Stadium.

Our venue features two distinct spaces: the pub and rooftop and our basement bar, The Locker Room. From busy game days and live entertainment to private functions, corporate events and casual catch-ups, there’s plenty of variety in what we do.

Having opened in May 2026, we’re still building our story. We’re looking for a Venue Manager who wants to help shape the venue, build a strong team culture and make The Milton a place people return to.

You’ll work directly with the owners, alongside our kitchen, marketing and events teams, with the opportunity to contribute ideas and see them through.
