About Us

Pearl by P&D; is a contemporary Sri Lankan fusion restaurant focused on delivering quality food, carefully prepared drinks and an enjoyable dining experience.

We are currently seeking an experienced bartender who is confident working independently behind the bar while also providing attentive and professional service on the restaurant floor.

This is a hands-on role suited to someone who has a genuine interest in cocktails, wine and hospitality, and is comfortable balancing bartending responsibilities with general table service.

Key Responsibilities

Bartending & Beverage Service

- Independently prepare and serve a wide range of classic cocktails, with a solid understanding of ingredients, measurements and preparation techniques.
- Learn, memorise and consistently execute our signature cocktail recipes.
- Prepare mocktails and other non-alcoholic beverages to a high standard.
- Provide confident wine recommendations, including suitable food and wine pairings.
- Demonstrate sound knowledge of wine varieties, serving temperatures, storage and handling.
- Manage bar opening and closing procedures, including preparation, cleaning and restocking.
- Maintain high standards of bar presentation, glassware cleanliness and overall organisation.

Restaurant & Customer Service

- Take food and beverage orders accurately and confidently.
- Manage tables and provide attentive, professional service throughout the dining experience.
- Assist customers with menu enquiries and offer suitable food and beverage recommendations.
- Process customer payments and operate the POS system.
- Work efficiently between the bar and restaurant floor,



responding to service demands as required.

Essential Requirements

- Minimum 2 years of previous bartending experience, ideally in a restaurant or cocktail bar environment.
- Valid RSA certification recognised in Victoria.
- Strong knowledge of classic cocktails, including the ability to recall recipes, ingredients and measurements from memory.
- Experience preparing signature cocktails and the ability to quickly learn new recipes.
- Confident understanding of wine, food pairings and appropriate wine storage and service.
- Ability to operate a bar independently, particularly during busy service periods.
- Previous experience in table service, including taking orders and managing tables.
- Availability on Friday, Saturday and Sunday evenings.
- Strong multitasking, communication and time-management skills.
- Professional presentation, reliability and attention to detail.

The Ideal Candidate

We're looking for someone who takes pride in both the drinks they prepare and the service they provide.

You should be just as comfortable preparing a classic cocktail from memory as you are recommending a wine to complement a customer's meal or managing a table during a busy dinner service.

The position involves a relatively even balance between bartending and front-of-house service, so flexibility, initiative and the ability to work independently are important.
