Aori is seeking an experienced Restaurant Manager to join our growing hospitality group. We are recruiting for management positions across our sister venues Callao and Alegre, with final placement based on your strengths, leadership style, and operational experience.

Up-to-date Japanese restaurant with a contemporary Australian edge, harbour views, and a strong sense of theatre, think sushi wheels, roaming steak trolleys, and an open kitchen showcasing ember grilled and raw dishes.
Callao

Vibrant, Peruvian‑inspired venue known for bold flavours, personalised service, and a lively waterfront atmosphere.
Alegre

Offers elevated Mexican food and cocktails in a busy waterfront setting, blending upbeat bar energy with polished, sit‑down dining.

About the Role

As a Restaurant Manager within our group, you will be responsible for leading daily operations, driving service standards, and supporting your team to deliver exceptional guest experiences.



You’ll work closely with senior leadership and have the opportunity to grow across multiple venues.

Key Responsibilities
Oversee daily service and ensure smooth, productive operations
Lead, coach, and develop a high‑performing team
Maintain venue standards, compliance, and presentation
Manage rostering, labour targets, and cost control
Support training, onboarding, and staff development
Contribute to a positive, motivated, and professional team culture
Work collaboratively with group management to achieve venue goals

Proven experience in restaurant or hospitality management
Solid leadership and communication skills
A hands‑on, proactive approach to service and problem‑solving
Ability to manage fast‑paced environments with confidence
