An established Brisbane bakery café needs an experienced Baker to take charge of daily production and finished cake and pastry work.
Everything on its counter, from bread to pastries and cakes, is baked in-house each day, and customers also order custom celebration cakes.
The employer wants someone who can plan a full day's bake, keep quality steady and help lead younger staff as the business grows.
The job is permanent and full-time at 38 hours per week.

Plan the day's production so the café cabinet is stocked before the doors open
Check raw materials for quality and measure out ingredients per run
Make doughs, batters, cake mixes, pastry and fillings, then mould and portion them into breads, rolls, cakes and tarts
Set up trays and tins and run the ovens, controlling heat and bake times
Decorate with icing, cream, chocolate,



fondant and sugar paste, including custom celebration cakes made to customer orders
Price, package and present products for display
Operate and clean bakery equipment such as mixers, sheeters and provers, within food safety, hygiene and workplace health and safety standards
Support recipe and product development and supervise and train junior bakers and kitchen staff
Certificate III or IV in Baking or Patisserie, or a higher qualification in patisserie or culinary arts
At least 1 year's experience as a Baker, Pastry Chef or Pastrycook within a commercial bakery, patisserie or hotel kitchen
Solid practical pastry, cake production and decorating skills
Sound food safety and hygiene knowledge, and willingness to work early mornings, weekends and a rotating roster
Desirable: experience with fondant and designing custom cakes
Desirable: experience supervising a kitchen or leading a team
Desirable: background in a bakery or café serving customers directly
