Paulie’s Pizza is opening soon on Oxford Street, Darlinghurst , and we’re looking for a hands-on Chef to lead the kitchen and service counter from the ground up.

This is a counter-service, casual venue with a tight, high quality-driven menu - think NYC-style pizza by the slice , made with care, served with energy, and delivered with consistency.

We’re after someone who brings experience, warmth, and leadership to both kitchen and service , with the skills to help build a venue that runs smoothly, feels good, and turns out next-level pizza every day.

About the Role

- Lead daily pizza production and kitchen prep
- Manage counter service, rostering, team flow, and customer experience
- Oversee ordering, stock, prep, quality control, and food safety standards
- Guide a small team across kitchen and FOH




- Help refine systems and maintain a high standard of service
- Work directly with the owner to shape the offering and venue culture
- Primary availability required for evening trade
- Experience with POS systems

About You

- Experience in pizza making
- 3-5 years in a chef or kitchen lead role
- Enjoys fast-paced service and hands-on leadership
- Brings structure, calm, and good vibes to the floor and kitchen
- Cares deeply about good food and a great customer experience
- RSA required (can be obtained within 30 days)

This is a rare opportunity to lead something new , build a small, talented team, and deliver easy food, done exceptionally well . Profit share based on performance to be discussed at four months.

Pay: $80,000.00 - $95,000.00 per year
