About the role

Almuna is seeking an experienced Chef de Partie to join our kitchen team in Rockingham, WA. This is a full-time position (minimum 38 hours per week) reporting to the Head Chef. You will manage designated kitchen sections, contribute to menu planning and cost control, maintain the quality of every dish, and train and supervise junior kitchen staff. Our menu is built around charcoal-grilled meats and seafood, handmade mezze and slow-cooked Moroccan tagines.

Key responsibilities

- Manage designated sections during dinner service, including the charcoal grill, pan and seafood, fryer, salad and cold mezze, tagine and dessert sections
- Prepare, cook and present dishes to recipe and presentation standards, including charcoal-grilled skewers, slow-cooked tagines and braised lamb shanks
- Assist the Head Chef with menu planning, recipe development and estimating food and labour costs
- Monitor the quality of dishes at all stages of preparation and presentation
- Order supplies, monitor stock levels and control food costs and waste
- Train and supervise junior kitchen staff, demonstrate cooking techniques and advise on cooking procedures
- Explain and enforce food safety and hygiene regulations in line with HACCP principles
- Store, label, freeze and preserve food correctly
- Manage allergens and dietary requirements, including gluten-free, vegetarian and vegan options
- Keep the charcoal grill, fryers and kitchen equipment clean, protected and well maintained
- Coordinate workflow during busy services and work closely with front-of-house

What we’re looking for





- Certificate IV in Commercial Cookery (or equivalent qualification and experience)
- Minimum 3 years’ experience in a commercial kitchen, including running a section as Chef de Partie or equivalent
- Proven experience on a charcoal grill or chargrill, and confidence with slow-cooking and braising
- Experience in Middle Eastern, Lebanese, Moroccan, Turkish or Mediterranean cuisine is highly desirable
- Sound knowledge of HACCP, food safety and allergen management
- Strong organisation, leadership and teamwork skills in a fast-paced environment
- Current food handling certificate
- Availability to work evenings, weekends and public holidays as required
