responsibilities Key Responsibilities: Prepare, season and cook a range of dishes in accordance with Bartiga's menu, recipes and established preparation methods. Prepare dishes reflecting Bartiga's Modern Australian cuisine and Southeast Asian culinary influences. Examine ingredients and foodstuffs to ensure appropriate quality and freshness before preparation and cooking.

Prepare ingredients for cooking by washing, peeling, cutting, chopping, slicing and portioning vegetables, meat, seafood and other food items in accordance with recipes and menu requirements. Prepare sauces, dressings, marinades, garnishes and other components required for daily menu preparation. Follow standard recipes and portioning requirements to maintain consistency in taste, quality, presentation and serving size.

Monitor cooking processes and regulate the temperatures of ovens, grills and other cooking equipment to ensure food is cooked appropriately. Monitor stock levels,



assist with ordering kitchen supplies and maintain appropriate stock rotation practices. Portion, plate and garnish prepared dishes in accordance with Bartiga's presentation and service standards.

Prepare food for lunch and dinner service, including à la carte, dessert, banquet and function dining, in accordance with the restaurant’s service requirements. Store raw and prepared food appropriately and maintain required food storage and temperature-control practices. Maintain cleanliness and organisation of kitchen workstations, cooking equipment and utensils.

Prepare and modify dishes to accommodate specified dietary requirements and food allergies where required. Qualification &
