Brisbane
Since opening its doors in 2013, NOMAD has grown from a singular vision into one of edition's most celebrated restaurants, with venues in Sydney and Melbourne. We are thrilled to announce that the next chapter will unfold in Brisbane's Fortitude Valley in Summer 2027, with the same ambition that has shaped every NOMAD before it.
NOMAD Brisbane will carry forward what has defined us from the beginning, generous hospitality, exceptional produce and dining experiences shaped by connection.
Inspired by journeys through Spain, Morocco and the Middle East, and grounded in a deep appreciation for Australia's extraordinary farmers, growers and producers, NOMAD has always drawn together influences from near and far. Its food is guided by a sense of place, celebrating local ingredients while embracing the flavours, techniques and traditions that have become synonymous with NOMAD.
While connected to its Sydney and Melbourne counterparts, NOMAD Brisbane will be distinctly its own. A restaurant that feels both familiar and new, shaped by its location and community, reflecting Brisbane’s incredible dining culture and Queensland’s world-class produce.
The Opportunity
We’re looking for an experienced Sommelier to lead our wine program in one of the city’s most exciting openings for 2027 on James Street. At NOMAD Brisbane, you’ll be joining a group whose wine lists are recognised at the highest level, with each of our venues recently being awarded 3 Glasses at the Australian Wine List of the Year Awards.
In this role, you’ll develop a considered, seasonal wine list that builds on NOMAD’s established beverage philosophy. You’ll showcase small, up and coming Australian producers alongside some of the country’s most iconic vignerons,
with organic and sustainable producers taking priority. You’ll work closely with our Group Sommelier, build strong relationships with producers, suppliers and industry stakeholders and create memorable and unique guest experiences.
The Head
Sommelier will also be responsible for driving our iconic wine dinners, working with some of the best wine makers in the country and beyond.
This is a hands-on leadership role for someone who pairs a genuine passion for wine with commercial thinking, enjoys developing people and takes pride in warm, polished hospitality.
Our ideal candidate will have
- 3+ years' experience in Head Sommelier or Senior Sommelier roles within premium dining venues
- A genuine enthusiasm for a new opening and the chance to help build a team, culture and wine program from the ground up
- Excellent Australian wine knowledge, with a good understanding of organic, biodynamic and sustainable producers, alongside a solid knowledge of international regions
- Excellent food knowledge and the ability to create thoughtful pairings, working closely with the Kitchen team
- WSET Level 3 or Court of Master Sommeliers qualifications preferred, or working towards them
- Proven experience building and costing wine lists, with a genuine care for product quality and guest experience
- Strong commercial acumen, with a firm grip on COGs, GP and labour management
- Strong operational experience across cellar management, stocktakes, ordering, allocations, invoicing, rostering and POS management
- Strong leadership skills, with the ability to support and develop both junior Team Members and senior leaders
- The ability to build and maintain strong relationships with suppliers, producers and stakeholders
- A keen eye for detail and the ability to maintain high standards across service, cellar presentation and operations
- The ability to work autonomously while treating guests and peers with respect, humility and kindness
- Commitment, passion and appreciation for all things food & beverage and the hospitality industry
What We Offer
- Competitive remuneration and gratuities paid weekly
- Grow your career with genuine opportunities across the edition Hospitality portfolio, including interstate and cross-venue pathways
- Ongoing training, mentorship and professional development to support your long-term career growth
- Access to WSET training
- The opportunity to work alongside some of most respected hospitality professionals
