Dakabin Hotel is on the hunt for a passionate, driven and talented Sous Chef to join our kitchen leadership team and be part of something exceptional!

Located prominently on the corner of Alma and Old Gympie Roads, our $35 million venue is a vibrant destination for great food, great company and memorable experiences.

Our restaurant delivers a unique dining experience, combining modern Australian cuisine with exciting Asian influences. With two kitchens and one dynamic restaurant, our menu brings together the best of East and West — from sizzling Hibachi-grilled creations to much-loved pub classics.

Following our recent success at the 2026 QHA Awards for Excellence, we're looking for a motivated Sous Chef who takes pride in their craft and is ready to help drive our kitchen to the next level.

THE OPPORTUNITY

Working closely with our Head Chef, you'll play a key role in the day-to-day operations of a busy, high-volume kitchen. You'll help lead, inspire and develop our team while delivering consistently outstanding food, maintaining high standards and creating a positive kitchen culture.

We're looking for someone who thrives in a fast-paced environment, brings creativity to the pass and enjoys working within a large, culturally diverse team.

YOUR RESPONSIBILITIES

- Support the Head Chef in leading and managing daily kitchen operations.
- Maintain consistently high standards of food quality, presentation and service.




- Work confidently across all sections, including pans, grill, larder, woks and other kitchen stations.
- Bring creativity and flair to our diverse menu, with a strong understanding of Asian cuisine.
- Coach, mentor and train team members to build a capable and motivated kitchen brigade.
- Manage food ordering, stock control and inventory to minimise waste and maintain efficiency.
- Ensure food safety, workplace health and safety, and all venue and group procedures are followed.
- Communicate effectively with the kitchen and wider venue team.
- Help maintain and exceed company standards while contributing ideas for continuous improvement.

WHAT WE'RE LOOKING FOR

To be successful in this role, you'll bring:

- At least 3 years' experience in a Sous Chef or similar role.
- Relevant commercial cookery trade qualifications.
- Proven experience in Asian cuisine.
- The ability to support and lead kitchen operations with minimal supervision from the Head Chef.
- Confidence working in a fast-paced, high-volume environment while delivering quality meals consistently.
- Strong leadership, communication and organisational skills.
- The ability to multitask,



remain calm under pressure and lead by example.
- A passion for hospitality, food and delivering exceptional guest experiences.
- A creative eye for food presentation and attention to detail.
- A positive, team-first attitude and the ability to work with people from diverse backgrounds.
