Mamasaan is Bondi’s Moulin Rouge-meets-1920s-Shanghai cocktail bar and Japanese-Taiwanese kitchen: live music, bottomless weekend lunches and a 4.6 rating from 1,000+ reviews.

We’re looking for a hands-on Restaurant Manager to run the floor and keep the venue firing.

Key responsibilities
Run day-to-day service across bar and dining, leading from the floor on our busiest shifts
Build and manage rosters in Square to hit wage-cost targets set by the directors
Control stock ordering and supplier relationships, keeping beverage and food COGS on target
Deliver a weekly KPI report to the directors: sales, wage %, COGS %, reviews
Leading, training and developing a high-performing team
Make sure liquor licensing, food safety and WHS compliance are always met
Own the guest experience: handle complaints, lift review scores and keep service consistent
Coordinate live music, events, functions and bottomless lunches
Train and develop the front-of-house team and implementing promotions and marketing




Maintaining premium service and presentation standards

About you
Minimum 12+ months' experience in a Restaurant Manager role
Solid financial and operational management experience
Current NSW RSA (essential); Food Safety Supervisor certificate (or willing to obtain within 30 days)
Robust cocktail and beverage knowledge
Confidence with rostering, wage control and stock systems (Square and OpenTable experience a plus)
Calm under pressure, and a leader people want to work for
Excellent communication and organisational skills

The role: Full time, 5 days including Friday to Sunday and evenings. Reports to the directors.
