We're beyond excited to be bringing our really bloody fun & unique brand of hospitality to beautiful Geelong, aiming to swing open the saloon doors in late November!!
We've taken over the old Geelong Hotel pub and are adding a mechanical bull and live music stage to really ramp up the fun!!
We will be offering the best in food, beverages and entertainment, with our signature cheeky twist.
We're seeking an experiencedSous Chef to work with our Head Chef in taking the reins in the kitchen.
You will help to lead our kitchen team in smashing out delicious Tex-Mex, Americana and Aussie Pub inspired dishes.
An emerging leader with experience in fast-paced kitchens, you will hustle to make Moon Dog Geelong one of the best places to work & eat in town!
The ideal candidate will have several years proven experience in similar roles (large, pumping, pub-like venues) and take great pride in what they do.
The role:
Reporting to the Head Chef you will manage the team and day to day operations of the Moon Dog Wild West kitchen.
Your responsibilities will include:
Supporting the Head Chef to create & execute your menu for lovers of Tex-Mex, Americana and Pub cuisine.
Ensuring all chefs maintain food hygiene safety standards.
Running busy services with a calm and positive demeanour
Administrative tasks including ordering,



rostering and managing food costs
People management, supporting and training of the team
Ensuring labour costs run to the desired budgets
The ideal candidate will have:
Minimum Certificate 3 Commercial Cookery - or equivalent
Well-developed communication and time management skills
A working knowledge and understanding of HACCP procedures, including the training of colleagues in procedures
Recruitment and training experience
Two + Years experience in a senior role in a busy kitchen.
Fully available for a five day roster across Monday - Sunday - this role requires weekend work.
