What began as a high-octane pop-up is now locked in at 235 Victoria St until the end of 2025, bringing Athens' raw street vibe to Darlinghurst every night.

- - Keep it tight - cash-handling, POS accuracy, and spotless stations so service stays seamless even when the lights drop and the DJ turns up.
- - Back your crew - jump on polishing glassware, restock mezze plates, or coach a recent teammate; no silos, all hustle.
- - Live our standards - nail NSW RSA rules, HACCP hygiene,



and internal service rituals. Rock-and-roll vibe, Michelin mindset.

- - 3 years in a busy restaurant, bar or club (Greek taverna/grill advantage but not essential).
- - Can juggle trays, drink specs and a 120 bpm soundtrack without breaking stride.
- - Crystal-clear English; extra language points for Greek.
- - Able to stand for long stretches and lift up to 12 kg (we won't ask for 25 kg-our kegs stay where they are).
- - Flexibility for nights, weekends, and the odd brunch rave.
