The cult favourite Bottega Bandito is looking for a Head Baker to lead the team to new heights.

Our Venues:

La Louisiane, Tarantino's, Anchovy Bandit, Bandit Pizza and Wine, The Stag Public House, Bottega Bandito (x2) and soon to come; Brasserie Louis.

About You

We are seeking candidates who are self-driven, creative, detail-oriented, and comfortable in a structured and high-pressure environment. You will have a genuine passion for hospitality and a commitment to delivering memorable, elevated products and service.

The Role

In this role, you will be working alongside our amazing chef team,



including executive Chefs (Shane Wilson & Michael Henderson), in creating and delivering our products in the best light possible! Work to develop our menu, control costs, and progress the team, to create and deliver breads and pastries that exceed customer expectations.

Responsibilities:

- Mixing, shaping and baking sourdough breads and laminated doughs
- Preparing ingredients as per company specifications.
- Responsible for the pastry kitchen.
- Manage costs by minimising wastage and maximising output.
- Manage financial KPI's including Cost of Goods and Staff Wages.
- Ensure guest experience metrics are achieved
- Good communication and effective time management skills.
- Keeping customers happy and coming back!
