Chotto Matte is a globally recognised Japanese-Peruvian (Nikkei) restaurant group with venues in London, Manchester, Toronto, San Francisco and Riyadh, and we're bringing the experience to Bondi. Our restaurants are immersive spaces where vibrant cuisine meets energetic beats, and every guest leaves with a story to tell.

We're building our Front of House leadership team and are looking for experienced hospitality leaders to join us. As the Restaurant Manager , you will beporting to the General Manager, you'll help run the day-to-day Front of House operation, leading from the front during busy services and making sure every shift runs smoothly, safely and profitably.

You'll be responsible for:

- Leading, training and motivating the Front of House team, including pre-service briefings and ongoing feedback
- Supporting rosters, labour planning and payroll-related tasks in line with labour targets
- Maintaining Chotto Matte standards across food and beverage quality, presentation and service




- Working closely with the Head Chef and bar team to keep service timing and communication tight
- End-of-day reporting and reconciliation
- Handling guest feedback and resolving issues with sound judgement
- Supporting recruitment, performance and development of the team, and covering for the General Manager when required

About you:

- At least 2 years' experience in restaurant management or a similar hospitality leadership role
- Strong supervisory skills and a solid understanding of restaurant operations and service standards
- Valuable knowledge of health, safety and food safety requirements
- Calm under pressure, well organised and energetic on the floor
