Biànca was born out of a desire to bring the spirit of Italian dining to Brisbane’s Fortitude Valley, capturing the effervescence of a classic trattoria within a sleek, warm, and colourful setting.
The food focuses on perfecting classic Italian dishes, made in-house with fresh, seasonal produce. The beverage program is thoughtful and balanced, featuring Italian-leaning wines and seasonal cocktails that complement the food and the vibrant atmosphere.

The Role

Biànca is looking for a highly skilled and qualified Chef de Partie with experience in Italian cuisine to join our high-performing kitchen team. In this role, you will take ownership of your section, manage prep quality and par levels, and help run the pass while contributing to a diverse, high-quality menu.

Beyond cooking,



you will lead by example - working closely with the Sous Chef to mentor junior staff and maintain our standards of excellence in taste, speed, and presentation. This position requires exceptional attention to detail, robust leadership, and the ability to thrive under pressure in a fast-paced environment.

Skills & Experience

- Proven experience as a Chef de Partie in a high-volume, quality venue
- Hands-on experience with high-volume pasta making, oven work, and hot sections
- Confidence running the pass and maintaining quality under pressure
- Ability to mentor junior chefs and support the Sous Chef
- Commitment to food safety, hygiene, and strict recipe execution
- Adaptable, positive attitude with strong team communication
- Commercial cookery qualification, apprenticeship, or equivalent experience
