Eleanors is Potts Point’s all-day local sanctuary - blending the warmth of a Mediterranean taverna, European bistro, and classic Australian corner shop. We operate seamlessly across three day-parts, starting strong at 7am with exceptional coffee, and delicious eats before transitioning into lunchtime sandwiches and evening tap wines.

We’re looking for a sharp, speed-focused, and warm Head Barista to anchor our high-volume morning engine and set the tone for our local community.

The Coffee Program

We’re proud to partner with Black Market Roasters, pulling high-grade specialty coffee engineered for consistency, balance, and high-volume performance. As Head Barista, you’ll take full operational ownership of this partnership, maintaining exacting extraction standards and serving as the primary face of our morning trade.

What You’ll Do:

- Own the Bench: Drive high-volume morning coffee service with speed, precision, and consistency across both takeaway counter trade and seated dine-in.

- Set the Standard: Dial in our beans daily, adjust extraction parameters throughout service, and ensure drinks are consistently top-tier.

- Drive Workflow & Speed: Manage peak-hour workflow, coordinate with your support barista/milk hand, and keep ticket times under 3 minutes during heavy rushes.

- Manage Stock & Ops: Handle coffee bean orders, monitor milk pars, and manage barista consumables to keep milk waste low and margins tight.

- Equipment Maintenance: Perform daily, weekly, and monthly machine maintenance,



and cleaning routines to keep our setup in prime condition.

- Build Community: Recognise our local regulars, learn their orders, and create a genuine, upbeat neighbourhood vibe at the front counter.

What We’re Looking For:

- 3 years experience as a Senior or Head Barista in high-volume, fast-paced Sydney venues.

- Proven speed and volume handling - cool under pressure when the ticket printer is pumping during peak trade.

- Technical expertise in dialing in espresso, managing grinder calibration, and equipment care.

- Strong communication and leadership skills - able to direct a second barista/milk hand cleanly during rushes.

- Pride in presentation - clean bench work, consistent latte art, and high hygiene standards.

- A natural host persona - friendly, reliable, and excited to build rapport with Potts Point locals.
