Multi-Venue Restaurant Operations Manager
Gemelli Group | Gold Coast & Brisbane
Salary: $100,000–$110,000 KPI-Based Performance Bonuses
Full-Time | Senior Hospitality Management
About Gemelli Group
Gemelli Group is an established and growing hospitality group with a portfolio of successful restaurants across the Gold Coast and Brisbane.
We are passionate about delivering exceptional Italian dining experiences, with a robust focus on quality food, genuine hospitality, outstanding service and creating memorable experiences for our guests.
As our group continues to grow, we are seeking an experienced, driven and hands-on Multi-Venue Restaurant Operations Manager to lead our restaurant teams, strengthen operational performance and maintain consistently high standards across our venues.
About the Role
This is a highly operational, service-focused leadership position suited to someone who thrives in a fast-paced restaurant environment and leads from the floor.
Working closely with senior management, you will oversee the day-to-day operations of multiple restaurants, with a particular emphasis on front-of-house service delivery, leadership development, guest experience and operational consistency.
This is not a traditional Monday-to-Friday office role. While administrative, reporting and strategic responsibilities form part of the position, the majority of your time will be spent working directly within our venues, particularly during evening services, weekends and peak trading periods.
You will be responsible for supporting and developing Restaurant Managers, ensuring consistent service standards and driving accountability and operational excellence across the group.
The position will be based primarily on the Gold Coast, with regular travel to our Brisbane venues required.
Key Responsibilities
Service Excellence & Venue Operations
- Maintain exceptional front-of-house service standards across all assigned venues.
- Be actively present during busy restaurant services, supporting teams and leading by example.
- Ensure consistently high standards of guest experience, hospitality and service delivery.
- Identify opportunities to improve service efficiency, floor operations and overall venue performance.
- Monitor and improve service procedures, presentation and operational consistency.
- Proactively manage guest feedback, complaints and service recovery.
- Conduct regular venue inspections, operational reviews and service assessments.
- Ensure company policies, procedures and operational standards are consistently implemented.
Leadership & Team Development
- Provide ongoing leadership,
coaching and support to Restaurant Managers and front-of-house management teams.
- Hold venue management teams accountable for performance, operational standards and service delivery.
- Identify training opportunities and implement structured improvements across the group.
- Support recruitment, onboarding, performance management and employee development.
- Build a positive, professional and high-performing team culture.
- Develop strong management teams capable of operating independently to a consistently high standard.
- Address performance concerns proactively and implement appropriate corrective action.
Commercial & Operational Performance
- Monitor venue performance against revenue, labour and operational targets.
- Work closely with Restaurant Managers to improve labour efficiency, rostering and overall productivity.
- Review operational KPIs and implement strategies to improve results.
- Identify opportunities for cost control without compromising service standards or guest experience.
- Support the implementation of group-wide operational initiatives, systems and procedures.
- Monitor restaurant performance and provide regular updates and recommendations to senior management.
- Assist in developing and executing strategies to improve profitability, operational efficiency and long-term business performance.
About You
We are seeking an experienced hospitality professional with a strong background in full-service, à la carte restaurant operations, exceptional front-of-house leadership skills and a genuine passion for delivering outstanding guest experiences.
Essential Requirements
- Minimum 2 years' experience in a similar multi-venue or multi-site restaurant operations management role.
- Proven experience in full-service, sit-down restaurants, ideally within premium casual dining or high-volume à la carte environments.
- Extensive front-of-house service knowledge, including floor management, guest experience, service standards and service recovery.
- Demonstrated experience leading, coaching and developing Restaurant Managers and front-of-house teams.
- Strong commercial understanding of labour management, rostering, budgeting and operational KPIs.
- Excellent communication, organisational and problem-solving skills.
- Confidence managing busy restaurant services and leading teams from the floor.
- Ability to manage competing priorities across multiple venues.
- A proactive, solutions-focused approach with strong attention to detail.
- The ability to drive accountability, address performance issues and implement operational improvements.
- Full, unrestricted working rights in Australia.
- Current driver's licence and reliable personal transport.
- Flexibility to work evenings, weekends and peak service periods.
Please note: This position requires demonstrated experience in full-service restaurant operations. Experience exclusively within takeaway, quick-service or fast-food environments will not meet the requirements of this role.
Above all, we are looking for someone who leads from the front — an operations professional who is comfortable stepping onto the restaurant floor, supporting teams during busy services and setting the standard for exceptional hospitality.
What We Offer
- Competitive salary of $100,000–$110,000 per annum KPI-based performance bonuses.
- Company-provided laptop and mobile phone.
- Fuel expenses covered for approved work-related travel.
- A senior leadership position within an established and growing hospitality group.
- The opportunity to make a genuine impact on service standards, team development and operational performance.
- A supportive senior management team with opportunities for professional growth and career progression.
- Exposure to a diverse portfolio of established restaurants across the Gold Coast and Brisbane.
Working Arrangements
This is a full-time position based primarily on the Gold Coast, with regular travel to Brisbane required.
The role involves a combination of office-based responsibilities and hands-on venue operations, with a predominant focus on evening services, weekends and peak trading periods.
Candidates must have their own reliable vehicle. A company laptop and mobile phone will be provided, along with fuel coverage for approved business travel.
