Lead one of Lygon Street’s busiest Italian-Australian restaurants, combining hands-on floor leadership with genuine commercial and operational ownership.

Who we are

Johnny, Vince & Sam’s Ristorante is a lively Italian-Australian restaurant in the heart of Carlton’s Lygon Street.

Built around the warmth, energy and nostalgia of the Italian-Australian family table, JVS is a busy, high-volume, two-level restaurant serving lunch through late seven days a week. Alongside our everyday restaurant trade, the venue also hosts large functions and group dining across multiple spaces. Johnny, Vince & Sam's.

We are part of a broader Melbourne hospitality group, giving the Restaurant Manager access to an established senior management and support network while still having genuine responsibility for the performance of the venue.

We are now looking for an experienced Restaurant Manager / Venue Manager who can lead from the floor while maintaining a strong commercial view of the business.

What you’ll do

You will take ownership of the day-to-day performance of the restaurant, working closely with senior management, the kitchen leadership team and the broader group.

Your responsibilities will include

- Leading a busy restaurant operation and maintaining strong service standards across every shift

- Leading, coaching and developing the management and front-of-house teams

- Managing rosters, labour costs and workforce planning

- Monitoring sales, budgets, COGS and operational performance





- Reviewing results and identifying opportunities to improve efficiency, profitability and guest experience

- Recruiting, onboarding, training and performance-managing team members

- Managing stock, ordering, suppliers and key operational administration

- Working closely with the kitchen and senior leadership team on planning, performance and future requirements

- Maintaining strong standards across presentation, compliance, service and guest recovery

- Leading from the floor during service while ensuring the operational and commercial side of the business remains under control

This is not a purely administrative management position. We are looking for someone who enjoys being visible in the restaurant, understands the rhythm of a busy service and can lead the team from the front.

What you’ll bring

We are looking for an experienced hospitality professional who has already demonstrated the ability to lead a substantial restaurant operation.

You will ideally bring

- 5 years’ restaurant or venue management experience, with recent experience in a comparable leadership position

- Proven experience in a busy, high-volume restaurant environment

- Strong commercial understanding of labour, budgets, COGS, forecasting and cost control

- Demonstrated experience leading,



developing and holding management and service teams accountable

- Robust floor leadership and a genuine understanding of hospitality and guest experience

- Confidence working with senior management, chefs, suppliers and other stakeholders

- Strong organisational skills and the ability to identify operational problems and implement practical solutions

- Sound wine, food and beverage knowledge

- Current Victorian RSA and appropriate hospitality compliance knowledge

Experience within Italian restaurants, premium casual dining or established European-style hospitality venues will be highly regarded.
