Olive is a Mediterranean oasis, offering a blend of cuisines from Morocco to the Middle East. Our focus is generous, honest, seasonal food, and we have built a thriving restaurant.
As part of Sprout Food Group, Olive is supported by a team of professionals who look after much of the behind-the-scenes work of running a restaurant.
This lets our restaurant team focus on what matters: preparing consistently great food, providing an outstanding customer experience, and building a cohesive, supportive team focused on growth. Our back-of-house and front-of-house teams work closely together.

- Cooking and plating to a high, repeatable standard, ensuring every dish follows the correct recipe and portion size.
- Ensuring all food is of the highest quality in taste and presentation and served in a timely manner.
- Supporting the Head Chef and taking full responsibility for day-to-day kitchen operations in their absence, including service leadership, work allocation, staff breaks, operational decisions, supplier issues, stock issues.
- Working autonomously and completing tasks on time.
- Leading, coaching and mentoring junior back-of-house staff, including supporting the Head Chef with their onboarding, allocating work, monitoring performance and providing in the moment constructive feedback, and supporting ongoing skills development.
- Supporting catering activities.
- Stock rotation and ordering.
- Following opening and closing procedures.
What you will bring
- A trade qualification in commercial cookery: Certificate III in Commercial Cookery (SIT30821) or Certificate IV in Kitchen Management (SIT40521), or an equivalent qualification.
- Indicatively, at least 2 years' experience as a Sous Chef or Chef de Partie in a commercial kitchen.
- Exceptional technical skills, the ability to execute consistently to a high standard, and contribute new ideas.
- Open, respectful and transparent communication with the Head Chef and team, including listening, resolving issues, and giving and receiving feedback.
- Quick thinking and adaptability. You stay cool under pressure and make sound decisions on the fly, based on how we operate and what matters to Olive.
- A habit of fixing issues as they arise, so mistakes never leave the kitchen.
- A commitment to a teaching, learning and growth environment. Our kitchens are supportive and educational.
- Leading the kitchen team through busy service, coordinating sections, monitoring timing and quality, resolving operational issues, and maintaining explicit communication with front-of-house leaders.
- A strong commitment to food safety and work health and safety, and to making Olive a great place to work.
- Desirable: Experience with, and a passion for, Mediterranean food and its cultural traditions.
