It's a Greek supper-club colliding with club energy: DJs drop beats while Athens/Sydney inspired Street Food and flaming Bombe Metaxa fly out of the open kitchen; sax players thread through the crowd; cocktails like the Gazi Gemini out of a Gas Pump, keep the tempo up. What began as a high-octane pop-up is now locked in at 235 Victoria St until the end of 2025, bringing Athens' raw street vibe to Darlinghurst every night.

- You'll be one of the experience-makers who:

- Own first impressions - welcome guests with genuine Greek filoxenia (love of hospitality) and take orders confidently.

- Curate the flow - deliver food & drinks at the pace of the party so the room never loses its groove.
n
- Read the room - notice when a table needs an extra spritz, a quieter corner, or a sparkler-lit dessert moment.
n
- Keep it tight - cash-handling, POS accuracy, and spotless stations so service stays seamless even when the lights drop and the DJ turns up.
n
- Back your crew - jump on polishing glassware, restock mezze plates, or coach a current teammate; no silos, all hustle.
n
- Live our standards - nail NSW RSA rules, HACCP hygiene,



and internal service rituals. Rock-and-roll vibe, Michelin mindset.

- 3 years in a busy restaurant, bar or club (Greek taverna/grill advantage but not essential).
n
- Can juggle trays, drink specs and a 120 bpm soundtrack without breaking stride.

- Crystal-clear English; extra language points for Greek.
n
- Able to stand for long stretches and lift up to 12 kg (we won't ask for 25 kg-our kegs stay where they are).
n
- Flexibility for nights, weekends, and the odd brunch rave.
