About the Role

We are looking for an enthusiastic Full-Time Sushi Chef to join our team in a fast-paced environment. In this role, you will be responsible for preparing fresh, high-quality sushi, assisting with kitchen operations, and providing friendly customer service.

Key Responsibilities

- Prepare and craft high-quality sushi dishes, including nigiri, sashimi, maki, and specialty rolls, according to established recipes and presentation standards.
- Handle, slice, and prepare fresh raw fish and seafood with high precision and knife skill.
- Prepare sushi rice (Shari) to exact texture, temperature, and seasoning standards.
- Maintain strict hygiene, food safety, and sanitation standards in accordance with health department regulations.
- Monitor inventory, inspect raw ingredients for freshness, and manage daily seafood ordering and stock rotation (FIFO).
- Maintain and care for specialized sushi knives and kitchen tools.
- Interact with guests at the sushi bar, taking orders and delivering an engaging dining experience





Shifts & Availability

- Full-Time role, average of 38 ordinary hours per week (5 days per week)
- Flexible availability required, including weekdays, weekends, and evenings
- Availability during peak trading periods is highly desirable

Pay & Conditions

- Pay rates are in accordance with the Restaurant Industry Award 2020.
- Applicable classifications, junior rates and penalty rates apply where relevant
- Full training is provided with opportunities for ongoing development.

Requirements

- Must hold valid Australian working rights
- Must be reliable, punctual, and able to work in a quick-paced environment
- Strong communication and teamwork skills
- Previous hospitality experience is preferred but not essential
- Relevant kitchen experience is a plus (or Food Safety certificate if required)
