Ambrose Estate and 300 Acres Restaurant & Bar is an award-winning venue located on the beautiful Wembley Golf Course, featuring a modern restaurant alongside a spacious function centre that hosts weddings and corporate events.

We are looking for a reliable and experienced Bar Manager/Duty Manager to oversee bar operations and support the smooth running of our restaurant, bar and function centre.
n
This role is hands-on and focused on floor operations — perfect for someone who thrives in a fast-paced environment and enjoys being involved in the action.
n
You will work closely with the Restaurant and Functions Managers and play a key role in ensuring service runs smoothly across both spaces.
What You'll Be Doing n
n
Overseeing the day-to-day operations of the bar, ensuring efficient service and high standards of beverage quality
n
Managing beverage stock levels, stocktakes, ordering, storage and wastage to maintain effective inventory control
n
Ensuring the bar is properly set up, stocked, clean and ready for service
n
Working independently and undertaking Duty Manager responsibilities as required, including overseeing operations, cash reconciliation, closing procedures and securing the premises
n
Leading and supporting the FOH team during service, delegating tasks and ensuring staff perform their duties effectively
n
Running restaurant or functions shifts as required,



taking responsibility for service operations, staff coordination and ensuring a smooth and efficient service
n
Training, motivating and guiding staff to maintain service standards and improve team performance
n
Providing professional customer service, responding to enquiries and resolving complaints as required
n
Maintaining compliance with WHS procedures, RSA requirements, relevant liquor licensing laws and food safety standards
n
Monitoring bar equipment and facilities, reporting maintenance issues and ensuring safe and hygienic working conditions
n
Completing required stock records, shift reports, cash handling procedures and other operational administration
n
What We're Looking For n
n
Experience running shifts with a level of seniority (e.g. Supervisor or Duty Manager level)
n
Genuine passion for hospitality and strong beverage knowledge
n
Confident leading a team and coordinating service operations
n
Robust communication and organisational skills
n
Availability to work weekends and late nights
n
